Cauliflower & Green Onion (Scallion) Soup
This video is inspired by David Lebovitz, my favorite food blogger and author. On his Instagram (@davidlebovitz), he suggested a soup of cauliflower and green onions, with a little potato, bay leaf, thyme, salt, and pepper.
I'm a big fan of non-recipe recipes, so I gave it a go!
You'll need:
1 head of cauliflower, diced
1-2 bunches of green onions, chopped coarsely
1-2 small potatoes, diced
1-2 bay leaves
2-3 sprigs of thyme
salt and pepper to taste
Saute the green onions until the whites are soft. I used ghee but you can use butter or grapeseed oil. Then add the remaining ingredients and cover with water, an inch above the ingredients. Boil until all pieces are soft.
Blend with an immersion blender and season to taste.
Serve with cheese toast, sour cream, a boiled egg, or more green onions.
