Carrot Caper Salad
My favorite little diddy to keep around for myself. Just a few bites satisfies my search for flavor and nutrients. I can serve over lettuce to use up leftover salad greens, or wrap it up in a Spinach Crepe for a super nutritious snack.
Carrot Caper Salad
Dressing recipe from Deborah Madison's "The New Vegetarian Cooking for Everyone"
Ingredients:
1 bunch young carrots with greens still attached*
1/2 cup chopped parsley
1 shallot, finely diced
2 tablespoons capers
1 teaspoon lemon zest
2 teaspoons lemon juice
1 tablespoon white wine vinegar
1/3 cup olive oil
*remove greens as soon as you get home, to keep carrots crisp
