Truffle Scrambled Eggs Recipe
2 eggs, whisked well
2 pinches of salt
1 tbsp unsalted butter
1-2 tbsp homemade truffle butter
Bring 1 inch of water to a boil in a pot that can fit a smaller pan or a bowl just at the mouth of the pot. Reduce heat to a simmer, just to keep steam at a manageable pace. Melt butter in pan over the steam. Add whisked eggs and begin stirring immediately, pulling the pan away from the steam if curds are forming too quickly. Continue stirring for 8-20 minutes, until desired consistency is reached. Stir in truffle butter at the end. Serve hot, with toasted bread.
