Okra
I'm from Mississippi where okra is standard fare. But even I shiver at the sight of slimy, boiled okra oozing its way out of a jar. So, I understand the hesitancy to try the odd vegetable. I like its clean flavor. It's unlike anything else.
Here's my recommendation for trying okra without the sliminess:
- Slice the okra in even pieces.
- Heat a skillet to hot & add oil or ghee.
- Add the okra & let sit until brown on one side.
- Stir okra & add salt.
- Keep sauteing until other side browns.
- Salt & pepper to taste.
Okra can be fried & stewed, but if you're new to the vegetable, a clean saute may be the best way to experience the flavor & texture. Okra must be cooked within two days of buying it. It will go bad quickly.
